    Just eaten what is probably my favourite meal.. Whats yours..?

    I cut a load of pork into cubes, seasoned with black pepper n salt, fried it until golden. Also fried some onions and chucked them in..
    Put the lot into a casserole dish, covered in cider and cooked in the oven on a low temp for 2.5 hrs.. You may need to add more cider, just depends how you like your gravy..
    Serve with mash taters n peas..
    Bleddy ansum..

    I have yet to do this in a hangi, but I bet it will work well..

    I think a roast is hard to beat but it's a challenge to make away from your own kitchen. I also love Spaghetti puttanesca which is normally what I have when fending for myself.

    A good roast is hard to beat.. How do you do yours..?

    A roast can be done over the fire, but its not so easy as in a kitchen..

    A roast is not a roast without roast potatoes. Par boil the spuds, strain 'em and then put 'em back in the sauce pan and add a couple of spoon of goose fat to melt. Try and coat all the spuds. That done pop 'em on a tray and into the oven at about 180 until golden.

    Any crackling on pork *must* be crunchy - it's the law.

    Beef must be "runny" in the middle.

    This is controversial but cauliflower cheese with a roast is plain wrong.

    Favourite meal ?, Chicken, it has to be Chicken. Very easy to cook indoors or out and enough recipes out there to last a lifetime.

    Its not wrong its yummy, especially when you are left with gravy and cheese sauce on your plate and you clean it up with bread and butter. A lot of people go wrong by making the sauce too thin. Make it as thick as thick yoghurt, let it go cold and then spoon and spread it over freshly boiled or steamed cauli which has been refreshed in cold water and left to drain well. Add cheese on top and whack in a hot oven for 25 - 30 minutes.

    I am with you on the taters, but I use bacon fat and I like to score the taters once boiled..
    I am not into fat, so don't like crackling, and I like my meat well cooked, so runny ain't good for me.. I know I am in the minority on those..
    Cauliflower cheese is ok, esp with b beans n mash, but not had it with a roast.. Do some folk do that..?

    a nice fatty cut of beef done til its just a little brown on the fat...

    Steak and Kidney pudding at home or Steamed Bacon and Onion Suet Roll when out and about, I will eat them with anything, they are just scrumptious,

    Hark at me, I sound more like Nigella Lawson...lol
    Campfires are best shared with friends.
