as a bit of an add on to my bacon curing thread heres a simple plan of the smoker i use,the lower the heat and the longer the smoke the better.

50 gal oil drums are easy to come by. lets see some pics.

What wood would be the best to use? Ive made a smoker this weekend well I say made there wasnt alot to do. Just having some issues with times to smoke the meat for. Any ideas from anyone?

Wood to use is any basic hard wood, oak, beech, and most fruit trees.
Add if possible a small amount of aromatic wood like hickory ( BBQ pack ) bay, juniper .
And of course u can use peat.

Cooking times ??
Mackerel, eels, kippers aporox 4-6 hours Cold smoked
Hot smoked about 3-5.
hours depending on size of course.
Other meats ie: 10 kg up to a week.

Top class post fish, by the way may I just add that you can also use a disposable BBQ
In ur smokers, light the BBQ place in smoker with a metal backing try on top of it with DAMP hard wood shavings in it.
then let it do the smoking for you :-) if it gets to hot you can always add more wet sawdust.

O and don't forget to salt ur fish b4 smoking ( brine or dry salt )

To make brine, 150g salt per litre of water, boil for a few minutes then leave to cool.
Fish in brine 500g = 1/2 hour

Hmmm - you have me watering at the mouth now. I have the shavings, I just gotta catch a few fish and make a smoker. :)

Hi there, great smoker. I have been lucky and just got a ready made hot smoker.
This one has the smoke/heat chamber on the left hand side, the smoking chamber on the right with a stck at the far end of this.
With controlled vents at either end I can control the amount of heat/smoke in the chamber.
These type would also be easy to make with a large barrel BBQ and adding a smoke /heat chamber the other end.
Sorry I can't add any pictures yet but will try later if anyone interested.

Hi Kieran, get some charcoal going then add my soaked hard wood chips.
